Well you do learn something new every day. A customer called us today, John master bread baker, desperate to find unpasturised honey. He explained that when making sour dough bread the key is not to use supermarket honey because its been intense heated and that kills the natural yeasts in the honey that helps to preserve the breads freshness and lasting power!
